A Little Treat for Me....

Tonight I was feeling extra tired, overwhelmed and under-appreciated as I'm sure NONE of you have ever felt. So I thought, I need to give myself a treat. So Voila!!! Spinach-Artichoke Dip!!

I love this recipe. I've had a lot of spinach-artichoke dips. Basically, I've combined every recipe I've ever had and this is what I came up with.

Spinach-Artichoke Dip
1/2 cube of margarine
1 8oz Cream Cheese
1/2 C. Sour Cream
1 pkg. frozen spinach (thawed and drained)
1 can artichoke hearts (chopped)
1 C. Mozzarella Cheese
1/2 C. Parmesan Cheese
1/2 can of green chilies
1/2 onion, chopped

Saute the onions in the margarine. Then add each ingredient in the following order and saute: spinach, cream cheese, sour cream, parmesan and 1/2 of the mozzarella cheese, artichoke hearts, and green chilies. Saute for 2-3 minutes. Transfer to a pie plate. Top with remaining mozzarella cheese. Bake at 350 degrees for about 10-15 minutes or until the cheese is bubbling and melted on top. Serve with tortilla chips or crackers.

Now I'm going to go eat me some DIP!!!
