Freezer Meals: Spicy Mozzarella Meatballs

I love meatballs! They are great with noodles, rice, or even on their own. I love them because they make a TON!! And I don't have to cook so much. I make loads of them and freeze them. Then when I need a quick meal, I pull them out and Voila! I have food and I didn't have to do very much.



This recipe is a little different from my other meatball recipe because these are spicy meatballs. They really aren't too spicy, but they do have a little kick to them. So here we go!



Combine your ground beef, cheese, mustard, bread crumbs and egg together. The best way to mix this bad boy is to use your hands! I know that might be totally gross for some of you, but it is the fastest and the best.

Now, using some sort of spoon (I use a cookie scoop. You know like the ice cream scoop.) Scoop out about 1" meatballs. You don't want them too big or your husband might complain that "This are too big!"



Put them on the cookie sheet and bake.

And Voila! Meatballs! Let them cool on a separate plate or you'll just have really, really greasy meatballs. Then put them in a ziploc bag and freeze them. Mmmm.....I feel like having spaghetti now.





Spicy Mozzarella Meatballs



2 lb ground Beef

2 Tbsp Hot Mustard

1 c. Mozzarella Cheese

1/2 c. Bread Crumbs

1 egg



Place ground beef, mustard, cheese, bread crumbs and eggs in a bowl and mix. Take about 2 T. balls of meat mixture make flat and add cheese in the middle and roll the rest of the meat around the cheese. Place on a grease, foil liner cookie sheet. Bake at 425 degrees for about 12 minutes.
