Chicken Lettuce Wraps

A great recipe I got from my sister-in-law Kim.

Lettuce Wraps

2-4 chicken breast, thawed
2 Tbsp garlic
1 tsp. minced ginger
1/2c. chopped peanuts
Teriyaki Sauce
1/2 c. minced chives
Head of lettuce

Dice chicken and season with salt, pepper, garlic, and ginger. Place in a saucepan and cook until chicken is done. Drain off excess liquid from the chicken and return to stove. Add in peanuts and teriyaki sauce. Once heated through, garnish with chives.

Lettuce Bowls: Cut across the top of the head of lettuce 1/3 of the way down and separate the leaves into individual bowls. Roll the chicken in the lettuce and enjoy.

Serve with fried rice, egg rolls or white rice.
