Ham & Cheese Muffins

I made these muffins for Sunday breakfast. They were pretty good. But make sure you add enough ham for a stronger taste. Enjoy!


Ham & Cheese Muffins

2 c. flour
1 Tbsp baking powder
1/8 tsp salt
black pepper
3 oz chopped ham
1 1/4 c. cheddar cheese
2 large eggs
1 c. milk
6 Tbsp Oil

Preheat oven to 400 degrees. Sift flour, baking powder, salt and pepper together. Stir in ham and cheese. In a separate bowl, mix eggs then add milk and oil. Make a well in the middle of your dry ingredients and add in your wet ingredients. Fold the two together. (Try not to over mix.) Place in greased or lined muffin tins and place in the oven for 20 minutes or until risen and golden brown. Let set for 5 minutes before serving.
