Lemon Bread


A delicious summer time snack that is light but so yummy!

Lemon Bread
1 3/4 c. flour
3/4 c. sugar
2 tsp baking powder
1/4 tsp salt
1 egg
1 c. milk
1/4 c. oil
2 tsp lemon zest
1 Tbsp lemon juice

2 Tbsp lemon juice
1 Tbsp powdered sugar

Grease bottom of a loaf pan and set aside. Mix flour, sugar, baking powder and salt in one bowl. In a separate bowl, combine egg, milk, oil and 1 Tbsp lemon juice. Add wet ingredients to dry ingredients. Mix until lumpy. Then fold in lemon zest. Spoon batter into loaf pan and bake at 350 for 50-55 minutes. Meanwhile, mix lemon juice and powdered sugar. Once loaf is finished, drizzle with lemon/sugar mixture.
