Homemade Lemon Oreos

I love homemade oreos. I usually make them from a boxed cake. I also love lemon! I decided, why not combine the two and make Lemon oreos!! Mmmmm....

Combine yellow cake mix with a stick of butter and mix well. Add 1 egg and 2 tsp of fresh lemon juice and 1 tsp lemon zest.

It will look like this. It should be thick enough to scoop and plop.

Scoop into balls on a cookie sheet and bake at 350 degrees for 8-10 minutes or until golden brown.

They look like this. Now fill with lemon infused cream cheese frosting...

And you have yourself some lemon oreos! Mmmmm..

Homemade Lemon Oreos

1 yellow cake mix
1/2 cup butter/shortening
1 egg
1 lemon, juiced and zested

Combine cake mix and butter until blended. Add egg, 2 tsp of lemon juice, and 1 tsp lemon zest. Mix. Scoop 1 inch balls of dough onto a cookie sheet. Bake at 350 degrees for 8-10 minutes or until golden brown. Place on cooling rack when finished.

Lemon Cream Cheese Frosting

1 pkg cream cheese
1/2 butter
powdered sugar
1 tsp lemon juice
lemon zest

With a hand or stand mixer, mix cream cheese and butter until smooth. Add powdered sugar until your desired constancy is reached. Fold in lemon zest and juice.
