Sausage Muffin with Egg

One of our favorite breakfast ideas is Sausage Muffins with Egg. My husband worked for McDonald's for a bit in high school. So really, you have him to thank for this.

First, brown up your sausage. I buy sausage by the pound and make my own little patties.

Toast up your english muffins. You could even make some HOMEMADE. Check a tutorial about that HERE!!

Now, take out a pan that has deep sides and add about 1/4" water. Place small custard dishes inside. Make sure to spray them with cooking spray.

Once your water boils turn it down and add your eggs. Take a fork and poke the center of the yolk and scramble slightly.

They'll look like this. Now salt and pepper.

Then cover. You'll know they are done when they look like this.....

Mmmm.....Now place sausage, cheese and egg on your english muffin.

And now you're ready for breakfast.

  1. This looks so yummy! And with your recipe for muffins I can somewhat control the sodium, tho with the sausage it will still be high. But worlds better than MacDonald's!
