Stuffed Peppers

A couple weeks ago peppers were really on sale. So I decided to get some and make stuffed peppers.

First, clean out those peppers and make sure they can stand up on their own. Then chop up the top of the peppers.

I also had some zucchini and yellow squash, so I shredded them to add to the mix. You'll need some onion too. Brown your meat.

In a little oil, soften up those veggies.

Add meat back in with veggies and mix.

Add some cooked rice.

And some cheese.

Fill up those peppers and top with cheese and bake!

Stuffed Peppers

1 lb ground beef or sausage
3-4 green, yellow, red or orange peppers
1/2 onion
1/2 zucchini, shredded
1/2 yellow squash, shredded
1-2 cups Italian Cheese, shredded
1 Tbsp Vegetable Oil
2-3 cups cooked rice

Preheat oven to 350 degrees. Brown ground beef. Meanwhile, slice tops off of peppers. Chop up pepper tops, chop onions, zucchini, and squash. Remove beef from skillet and place vegetable oil and vegetables into hot skillet. Saute until soft. Add beef to vegetables. Add cooked rice and mix. Add most of the cheese, leave some for pepper tops. Mix well. Place vegetable and beef mixture to hollowed peppers. Top with cheese. Bake for 20 minutes or until heated through.
