Grilled Shrimp & Pesto Pizza

It's grilling season and I'm enjoying having my grill out!

I decided to try a new grilled pizza recipe.  This one is a little unique.  Last summer I showed you my "Original" Grilled Pizza.  It is very tasty.  To make my new pizza I used the same pizza dough, but different toppings.

And I have to say, it is a bit healthier and quite tasty!!  And so colorful!!

It makes me want to lick the computer screen.  Mmmm......

I used store bought Pesto.  If you don't know what pesto is, basically it is basil, pine nuts, olive oil and garlic.  You can make your own pesto or do like I do and buy it!  Either way it is delicious.

Grilled Shrimp & Pesto Pizza

Pizza Dough Recipe (you could use your own if you want)
Olive Oil
12-15 raw shrimp
Artichoke Hearts, canned
1/2 onion, chopped
2 cloves garlic
1/2 c. fresh spinach leaves
Italian Shredded Cheese
Parmesan Cheese

Make your pizza dough and let it rise.  Meanwhile, chop onions, artichoke and garlic.  Heat up 2 tsp of oil in a pan.  Saute onion, artichoke and garlic until tender.  Remove from pan.  Place cleaned and shelled shrimp in same pan with 1 tsp oil.  Cook until no longer pink.  Add onion mixture to shrimp.

Heat up your grill.  Shape your pizza dough and coat both sides with a bit of olive oil.  Turn grill to low and cook your pizza dough.  Once mostly cooked, coat dough with pesto.  Add toppings as follows:  Italian cheese, spinach, onion and shrimp mix.  Shred fresh Parmesan on top.  Heat until melted or heated through. 

Serve hot.
