This is one of my most FAVORITE breakfast casseroles. My mother usually will make it for special occasions. It is so flavorful! So I thought I'd share.
Basically you mix everything together: eggs, cottage cheese cheddar cheese, flour, baking powder, salt, margarine and green chiles. And place it in a casserole dish. It will be runny. That is normal.
Chile Egg Breakfast Casserole
1/4 c. flour
1 tsp Baking Powder
1/2 tsp salt
1 c. cottage cheese
1 c. cheddar or jack cheese
1/4 c. margarine, melted
1/2 can diced green chiles (4oz can)
Beat eggs until lemon in color. Add flour, baking powder, salt, cottage cheese, cheddar, and margarine. Blend unitl smooth. Add chiles. Pour into a greased 8x8 baking dish. Bake at 350 for 30-35 minutes or until the top is golden brown.
