31 Days of Halloween: Apple Cinnamon Pancakes with Apple Butter Syrup


Our family LOVES breakfast.  So I try to do a few different recipes each month.  Mostly because I can't just eat bacon and eggs!  I thought with fall I should try a pumpkin or apple recipe.  This is what I came up with.

Apple Cinnamon Pancakes
1 box Jiffy Apple Cinnamon Muffins
1 egg
1/3 c. Heavy Cream
1 Tbsp water

Mix all ingredients together.  Place about 3 Tbsp of batter on a hot skillet.  Turn when pancake is solid.  

Apple Butter Syrup
1/2 c. sugar
1 Tbsp corn starch
1/4 tsp cinnamon
1 c. apple cider
1 Tbsp lemon juice
2 Tbsp butter

Mix sugar, corn starch and  cinnamon in a small saucepan.  Add apple cider and lemon juice.  Mix well.  Bring to a boil and then simmer until syrup thickens.  Remove from heat and stir in butter.

  1. does the apple butter syrup need to be refrigerated or can it be kept on the shelf ?

    1. Doodlebug_mom, because it is cider and butter, I would refrigerate it. Just to be safe.
