Feta & Spinach Wrapped Flank Steak

I love to grill!  I took a mini class a couple years ago and have been grilling delicious foods ever since.  This recipe started when I was in the meat department at our local grocery store.  I asked where the flank steak was and I got a bunch of recipe ideas from the butcher.
You'll obviously need a flank steak, but you'll also want some kitchen twine.  You'll want to wrap up that flank steak nice and tight once you stuff it with your feta cheese and spinach!!   It is as simple as that!

Feta & Spinach Wrapped Flank Steak

1-2 lb. Flank steak
1 c. Feta cheese
1 c. fresh spinach
Olive Oil

Place flank steak in between two pieces of plastic wrap.  Pound with a mallet until tender.  Remove plastic wrap.  Place feta and spinach inside the steak.  Roll steak up as tightly as possible.  Tie with kitchen twine.  Place on the grill on medium heat.  Grill all sides of steak until brown about 10 minutes.  Brush with oil and continue grilling on low for about 20-30 minutes until the internal temperature is 155 degrees.  Remove twine and allow meat to sit for 10 minutes before serving.
