Homemade Fish & Chips

My sister-in-law and fam live in Alaska!  Right...I know!  We enjoy visiting and when we do, we get fish!  LOTS of fish.  My husband went last year and brought home tons of halibut.  The best for fish and chips!

First, the chips!!

Oil, basil, parsley and salt
Slice your potatoes to, but not through the bottom.
Coat with oil and pop them in the oven.

The Fish
Make the batter.  Make sure you don't have lumps or chunks.
Get your fish ready.  I like to make about 2 in thick slices.
Batter the fish
Place it in that HOT oil
Pull those potatoes out of the oven
Serve with horseradish sauce or tartar sauce.

Homemade Fish and Chips

3 whole potatoes
1/2 c. olive oil
2 tsp salt
1/2 tsp basil
1/2 tsp parsley

Combine olive oil, salt, basil and parsley.  Slice potatoes every 1/8 inch without cutting through to the bottom.  Coat potato in oil mixture.  Place in a 425 degree oven for 15 to 20 minutes.

1 halibut fillet
1 c. flour
1/2 tsp. baking powder
1/4 tsp salt
1 c. milk
oil, for frying

Heat oil until HOT.  Combine flour, baking powder, salt and milk.  Mix until smooth.  Slice halibut into 2 inch pieces.  Place halibut into flour mixture and then into oil.  Fry until golden brown.
