Spaghetti Squash and Meatballs


After a CRAZY Halloween, I always love something easy and simple.  This is a great recipe for just that.

Plus, it is a healthy version!

Last year we grew TONS of spaghetti squash so we ate a lot of spaghetti squash and meatballs.

Spaghetti Squash & Meatballs

1 medium spaghetti squash
2 Tbsp margarine or butter
10-15 meatballs
2 c. Pasta Sauce

To make your spaghetti squash, slice it in half.  Place the two half in a microwave safe bowl or pie tin.  Add about 1/4 c. of water.  Cover with plastic wrap and microwave for 5-8 minutes or until the outside shell is tender.  Scrap out all the squash and add margarine and mix until melted.  Serve meatballs and pasta sauce over the top.

  1. My husband and I love spaghetti squash, but we've never tried it with meatballs. I will definitely be looking in to this!
