French Dip Soup

 
I LOVE French Dip Sandwiches.  I have loved them since my best friend in elementary school introduced them to me on a trip to Colorado.  This past summer we grew tons of onions in our garden.  Now I have tons to use.  So I thought, why not combine French Onion Soup with a French Dip Sandwich.  And deliciousness ensued.  
 
First, saute your onions in some oil.
 
You'll need roast beef.  I used some that was leftover from our sunday dinner.  You could do this or purchase some at your local deli.  Whatever works.
 
Add beef broth to your onions.
 
Toss in your roast beef.
 
Dish out your soup into cups, top with some type of hard roll or bread and a pieces of Swiss or provolone cheese.
 
Bake and enjoy the warm deliciousness!

French Dip Soup

3 cups sliced onions
2 cloves garlic, minced
3 Tbsp oil
5 c. beef broth
1 lb roast beef, sliced thinly
6 slices of bread or rolls
6 slices Swiss cheese

Preheat oven to broil.  Saute garlic and onions in butter until tender.  Add beef broth and roast beef to pan.  Heat until boiling.  Place 6 bowls onto a baking sheet.  Ladle soup into bowls.  Top with  slice of bread and Swiss Cheese.  Place bowls in oven until cheese is bubbly.  Serve hot.
