One of my most favorite things I love about Autumn time is the food that comes with the season. My all time favorites are pumpkin and squash. While I can't win my family over to squash, they do love my pumpkin recipes, so I thought I'd share some of our favorites.
These all happen to be desserts, but seeing as each has a can of pumpkin listed as an ingredient, you can feel kind of good about eating them...at least that's what I tell myself:)
If you read to the end I'll give a couple other pumpkin tips as well.
First up, Pumpkin Cookies--these are more cake-like than your typical chocolate chip cookies, but they are moist and filling. The original recipe I think came from DesignMom, but I can't find it right now and I added the chocolate chips.
--3 cups flour --1/2 cup butter, softened
--1 tsp baking powder --1 1/2 cup sugar
--1 tsp baking soda --1 can pumpkin
--2 tsp cinnamon --1 egg
--1/2 tsp nutmeg --1 tsp vanilla
--1/2 cloves --1 cup mini chocolate chips
--1/2 tsp salt
Preheat oven to 350 degrees. Combine dry ingredients. Cream sugar and butter. Add pumpkin, egg and vanilla. Mix in dry. Add chocolate chips. Spoon on to cookie sheets. Bake 15-18 minutes. These do not flatten out much, but remain more cake like.
Next up Pumpkin Bars that always get a rave review. This recipe came from my friend Valerie. This is a recipe that you can dress up or keep simple.
Stir together in a large mixing bowl:
--2 cups flour --1 tsp baking soda
--1 1/2 cup sugar --3/4 tsp salt
--2 tsp baking powder --1/2 tsp ground ginger
--2 tsp cinnamon --1/4 tsp ground cloves
Add, mixing until just combined:
--4 beaten eggs
--1 16oz can of pumpkin
--1 cup canola oil
Spread batter in a large jellyroll pan (15x10 or 15x20 for thinner bars). Bake at 350 degrees for 25-30 minutes or until a wooden toothpick inserted near the center comes out clean. Cool completely before frosting.
Option #1--Make a mix of powder sugar and milk. Drizzle over cake and dust with cinnamon. (This is what is pictured).
Option #2--Cream Cheese Frosting--Mix 3oz cream cheese, softened, 1/4 cup margarine or butter, softened, 1tsp vanilla, 2 cup powdered sugar
Option #3--Serve with whipped cream and dust with cinnamon
Finally, the easiest one of all Pumpkin Fluff, the favorite one of all.
Mix one can of pumpkin, one package vanilla pudding mix, 1 tsp pumpkin pie spice. Then fold in one container of CoolWhip. Serve with graham crackers or ginger cookies.
Some other things to do with pumpkin...some a little more devious to sneak in some added vegetables, or what I do with extra pumpkin.
--Stir it into spaghetti sauce or vegetable soup
--Add to pancake batter
--Use instead of oil for muffin mix, for a more savory type muffin
