August/September Recipes: Week Five and One

Lillian's Meatloaf

4 slices bread crumbs

½ C milk

2 eggs

1# Hamburger

½ C onion

¾ tsp salt

¼ tsp pepper

2 tsp baking powder

Soak the bread crumbs in the milk and beaten eggs for about 5-10 minutes. Some times I use oatmeal or soda crackers, but mostly I use bread crumbs. Mix all together and put in loaf pan, bake 350 about 1 hour.


Mix about 1/4c. ketchup, 1 squirt mustard, and brown sugar together and stir. Add it the last 10-15 minutes to the top of the meatloaf. It should be thick.

Spaghetti and Meatballs
1 lb Spaghetti
2 c. Spaghetti Sauce (I buy mine, but you could make your own)
1 lb ground beef
1/2 bread crumbs
1 egg

Combine ground beef, bread crumbs, egg, and salt and pepper (I also add garlic salt). Roll into 1/2 balls. Bake at 400 degrees for 10-12 minutes. Pour 6 cups of water into a saucepan. When boiling add spaghetti for about 10 minutes or until soft. Drain. Warm spaghetti sauce. Serve over spaghetti and top with meatballs.

Garlic Cloves
1 Lg. Green Pepper
1/2 Onion
1 lb. Chicken, cut into thin strips
Fajitas mix or (cumin, oregano, salt and pepper)

Slice the pepper and onions into julienne slices. Saute in oil on the stovetop until tender. Remove and replace with cut chicken. Saute until fully cooked. Add vegetables back into skillet. Add fajitas mix and a little water. Allow to simmer for 2 minutes. Remove and serve in warm tortilla or pita.

Crockpot Lasagna
1 lb ground beef
26oz can spaghetti sauce (I'll use the leftover from my spaghetti and meatballs from above)
6-8 lasagna noodles, partially cooked
12oz cottage cheese
shredded mozzarella cheese

Brown ground beef and drain off fat. Mix together beef and spaghetti sauce. In a crockpot, layer noodles, beef, cottage cheese and mozzarella. Repeat layers. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.

I sometimes don't even cook my noodles and just add about a 1/4c. of water or less. This helps to cook the noodles for me.

Pepper Steak
1 1/2 lb round steak, cut into 1/4 inch strips
2 chicken bouillion cubes, dissolved in 2 c. hot water
Dash of garlic salt
1 large onion, finely chopped
1 T. Suger
3 T. Corn starch mixed with 3 T. water
1 green pepper, cut into thin strips
3 T. Soy Sauce
3-4 C. cooked rice

Brown steak in oil in frying pan. Remove steak and add bouillion to pan. Add garlic. Stir in soy sauce, onion, sugar and pepper. Blend in cornstarch and water mixture stir until smooth. Add meat, cover tightly. Simmer 20 minutes. Add green pepper to top and simmer 10 more minutes. Serve over rice.

Grilled Cheese
4 slices of Bread
Sliced Cheese

Butter both sides of the bread. Place cheese in between bread slices. Grilled until golden brown in a skillet.
