Slow Cooker Mexican Pork Taquitos

Mexican food is comfort food for me.  I grew up in Arizona and spent many days enjoying yummy Mexican food.  When I got married, I wanted to make sure I incorporated a bit of Mexican flare into my dishes.  One of the first dishes I learned to make was delicious slow cooker Mexican pork.  Mexican pork can be used for tacos, taquitos, chimichangas and carnitas.  All delicious and all perfect paired with some homemade Pico de Gallo.

Mexican slow cooker taquitos are a delcious combination of pork, onion, lime juice, and cumin.  The perfect meal for lunch and dinner or as an afternoon snack.

Taquitos are one of my favorite dishes because not only are they delicious, but they are perfect for both lunch and dinner.  Make a big batch of taquitos for dinner and freeze the rest for lunches later in the week or month.  They freeze really well and can be reheated in the microwave or oven.

Slow Cooker Mexican Pork Taquitos


This particular recipe is made with pork country style ribs, but you can make them with a pork roast as well.  Pork roasts tend to be too big for make Mexican pork taquitos, so I go with the ribs instead.  

Slow Cooker Mexican Pork Taquitos

Yield: 16 Taquitos

Slow Cooker Mexican Pork Taquitos

ingredients:


  • 3 lbs Pork Country Style Ribs
  • 1/4 onion, chopped
  • 2 cloves garlic, chopped
  • 2 Tbsp Lime Juice
  • 1.5 tsp cumin powder
  • 16 corn tortillas
  • cooking spray

instructions


  1. Place pork country style ribs, onion and garlic in crockpot and cook on low for 6 hours or high for 3-4 hours.
  2. Shred pork and add lime juice and cumin.
  3. Warm up tortillas in the microwave for 30 seconds (use a microwave baked potato bag for best results).
  4. Spoon  pork mixture onto tortillas.  Roll tightly and place on a foil lined baking sheet.  Repeat with all tortillas.
  5. Spray taquitos with cooking spray and place in a 400° F oven for 10 minutes.  Rotate taquitos and cook for an additional 10 minutes.
  6. Serve with sour cream and homemade Pico de Gallo.
