September Recipes: Week Two

(I found this recipe at Our Best Bites. It is so good. I changed it a little bit.)
3 oz Cream Cheese
1/4 C Green Salsa
1 T. Lime Juice
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp onion powder
1 finely chopped garlic
2 sliced green onions
2 C. shredded chicken
About 15 corn tortillas
Cooking Spray

Heat oven to 425 degrees. Combine softened cream cheese, salsa, lime juice, spices and chicken in a bowl and mix. Heat corn tortillas in the microwave for about 30 seconds until soft enough to roll without breaking. Fill corn tortillas with chicken mixture. Place on a sprayed, foil lined cookie sheet. Make sure the taquitos don't touch. Before placing in the oven, spray taquitos with cooking spray (this will help the top to brown). Bake for 15-20 minutes. Mmmm...

Twice Baked Potatoes
4 potatoes
3oz cream cheese
1/2 sour cream
1 C. cheddar cheese, shreaded

Bacon bits (optional)

Bake potatoes in the oven at 425 degrees for about 30 minutes. Take out of the oven and let them cool for 10-12 minutes. Slice the potatoes in half. Using a spoon, gut the center of the potato and place it into a bowl. Add cream cheese, sour cream and 1/2 of the cheese to the potato mixture. Mix with a hand mixer until potatoes are creamy. Add potato mixture back into gutted potatoes. Sprinkle with remaining cheese, chives and bacon bits. Place in heated oven for about 10-15 more minutes.

Hamburger Casserole
1 lb ground beef
1 potato, sliced very thin
1 carrot, sliced very thin
1 can of green beans
1 can cream of mushroom or chicken

Brown the ground beef in a pan and then drain. Spray a 9x9 pan with cooking spray. Add a layer of ground beef, then potatoes, then carrots, then green beans and top with a couple spoonfuls of cream of mushroom. Repeat layers. Add about 1/4 c. of water and cover. Bake at 350 degrees for about an hour. Take the foil off and sprinkle with cheese and bake for another 10 minutes.

Mini Pizza

4 English Muffins
1 Can Tomato Sauce
Grated Cheddar or Mozzarella Cheese
Handful of Pepperoni

Split the english muffins is two. Spread a small amount of tomato sauce on each english muffin and sprinkle with oregano. Add graded cheese on top and pepperoni. Bake on 400 degrees for 8-10 minutes or until the cheese is melted.

  2. I want to try the hamburger casserole in the crockpot. I'm always looking for easy crockpot meals, but my husband is really picky. I think he will like this one - meat and potatoes - what's not to like??
